"We went to a wedding reception in Utah that was catered by June Williamson. The food was so amazing, and especially the coconut lime ice-cream. We talked to her and she mentioned this book so I ordered it on our ride home. We have made several things and only one of them was not a favorite. (maybe I did it wrong). The ice cream has been made 8 times already and I have started to even make variations of it. The great thing is it can be made without dairy (it uses coconut cream) and everyone loves it! The curries are easy and sooooo good! I really can not say enough good things about this cookbook and the title says it all, it really is easy!"

- The Coconut Lime Ice Cream is my favorite item in the book. The others are good as well but the Coconut Lime is amazing.

I was very excited to receive a copy of this book to review. There are so many recipes that I want to try to make. So far I have made 3 of the recipies and they were sooooo good. I had my husband flip through the pages and pick out what he wanted me to make and he commented that it appears the author knows her Thai food.
I haven't tried to make my favorite Thai dish yet, Fresh Spring Rolls (pg 14). I need to visit an asian market to get the ingredients. The recipes that I was able to make have ingredients that I was able to pick up at my local grocery store. I didn't find the wide rice noodles, so I used the thinner noodles on one recipe (Pad Seeiew pg 59), but it still was delicious. In my opinion, and my families, the meal was a success. I'm positive that I will be using this cookbook frequently! - I bought this book after attending one of June Williamson's cooking classes. I have had great success cooking from this book!
I had tried making Massaman Curry before, using the directions on the container. It turned out okay, but not great. June's recipe for it is perfect - everyone in my family loves it! I love sweet potatoes and never would have had the courage to use sweet potatoes instead of white potatoes in Massaman Curry without her class and book. Now I know, sweet potatoes work really well in this recipe! I'm never going back to white potatoes in Massaman Curry again.
During the class, I told her I really wanted to learn how to make Cashew Chicken like I get at my favorite Thai restaurant. When she told me that recipe is in the book, I knew I had to buy it. I've made the Cashew Chicken recipe three times already! It is so EASY and delicious. It is exactly what I was looking for!
I've also made the Ham Fried Rice recipe, which was such an improvement on how I used to do it. My whole family loved it and looks forward to me making it exactly the same again.
The Tom Kha Gai is also simple and delicious. Its been fun to visit the Asian market and use ingredients that I've never used before.
Next on my list to make is the Yellow Curry with Thai Pumpkin. After so much success already, I think this will be a great recipe too!
I look forward to trying many more recipes from this book. Purchasing this book inspired me to pull out the wok that I received for Christmas eight years ago and really start using it! Thank you June Williamson!!! - I met June when a work activity placed a group of us in her hands to explore Thai cooking. The recipes really were easy to prepare and extremely tasty! I immediately bought her cookbook so the journey wouldn't end there--and it thankfully hasn't.
As others here have mentioned, the coconut lime ice cream really is outstanding! We have enjoyed all of the recipes we have tried so far, and plan on cooking many, many more!
